BlueBerry Muffin with Lemon Sugar Crust

Finally i baked this muffin. I waited for so long because due to my ke-dekut-ness i not willing to spend money on fresh Blueberry. :p hahaha... But i wanted to bake this for so long so finally i brought 1 pack 125g from Giant and it cost me RM8.90. sigh... hehehe... see how kedekut i am. ^ ^ 

The outcome of the muffin was .... speechless delicious. wakakakakaka... myself also very satisfied. HB even comment this is so much better then Coffee Bean BlueBerry Muffin. fuiyoo... \^ ^/

Well, this is a little bit ugly because i put too much batter into the cup :) no patient again


This is definitely a keeper and i am sure will bake this again. :) I tweak a little bit here and there to suit my and my family taste :). if you prefer orginial recipe, you may refer here Table for 2 or more

Ingredients:
250gm cake/superfine flour
1 tsp baking powder
1 tsp baking soda
180gm sugar 
1 heaped tsp lemon zest (1 whole lemon zest, and added some into batter also)
125gm blueberries

2 eggs
80gm melted butter (Melt during microwave - quick and easy)
200ml plain yogurt

Method:
1. Preheat oven to 170C. (Do this only after batter is ready because my oven heat up very fast)
2. Sift cake flour with baking soda and baking powder.
3. Remove 2Tbsp of sugar and combine it with the lemon zest. Set aside.
4. Mix the balance of sugar with sifted flour. Set aside.
5. Lightly beat eggs and combine with melted butter and yogurt.
6. Make a well in the center of (4) and pour in (5).
7. Mix just to wet ingredient. Do not combine until very smooth. Add in left over lemon zest.
8. Put in blueberries and lightly mix. Do not break the berries.
9. Spoon batter into 12 4oz muffin cups (using 3oz muffin cup so it makes 15 - 16 cups)

    Top with some lemon sugar (3).
10. Bake for 35minutes or until a toothpick inserted comes out clean.   



Important notes:
Mix blueberry with a little bit of flour and make sure every berry covered with flour. This is to make sure it got distributed evenly in the muffin instead of all concentrate on the bottom of the muffin. :D

Dried Jelly Candy

This is another CNY treat i did, but this really time consuming as it needs to dry under the sun for long long time. :( 

This year is Water Dragon year and it brings lots water too... so weather not as hot as previous year so this candy took more then a week to dried out. NOT fully dried also but what to do tomorrow is 1st day CNY already. Can't be i still drying my candy when friends/relative visiting right. :p haha... so just eat la... hehe


But honestly, i think i will not eat much because i feel it is not so hygienic since it being exposed to all those vehicle's smoke, dust from the air even thought i close it but still there's hole right?!  ^ ^ So, this will be first and last time i make this. :)

Snack for my Baby ~ 1

Yesterday i get to know my baby not eating snack prepared from school and only get to eat after 12plus as my dad pick her up from school. :( She is a very picky eater, this also thanks to us (husband and I). Because she is the 1st child and everything also scare and dare not let her eat. :( so now she became so picky. sigh...

Anyway, i worry she will be hungry again today so i woke up early to prepare simple snack for her to bring school. She love cheese and white bread. :) Luckily something heathly and easy to prepare :p else i also do not know what to make for her :( i do not know how to and what to cook.... sigh..

Arrhhhh..... i cannot find my hearth shape cutter so use bear bear la no choice since i do not remember where i keep the cutter.


Then mummy of cos will eat the remaining bread la. :( i just spread some jam and telan ajek la. :p hahahaha

Butter Confrakes Cookies

This is another CNY cookies i am baking this year ~ butter cornflakes cookies. :) Well, this is very tedious but definitly a keeper and my sister even request to bake for her 2nd batch. NO WAY.... i am so tired already. hehe... not in same day for 2nd batch la... really killing me la. :p

Mixing the dough is easy BUT shape it ... OMG!!! First 50 pieces very excited and decorate it with 2 red cherries, 2nd 50 pieces starting to get bored and feel like dieing but still decorate with red cherries but only 1 in each pieces, 3rd 50 pieces done, no more cherries .. .who cares because half dead already, remaining 30 pieces confirm dead. :p Really really tired. OMG!!! hahahaha... after baking i need to put yoko-yoko because my back is so PAIN ar.... :p but i will bake again la, cause the response is good ma. hohohohoho

My girl also eat few pieces and she said very nice. ^ ^ nothing is more happy then my girl eating. :D

I tweak a little bit of the recipe to suit my and family taste. :) Here is there ori :) weekend kitchenette

Ingredients:
250gm Butter
110gm sugar
1 egg
1 egg yolk
350 self raising flour (i use superfine + 1 tbs baking powder)
1/2 tsp vanilla essence
1 box of cornflakes
Some sugared cherries

Method:
1. Cream the butter with sugar and vanilla till cream and fluffy. (butter must be in room temp)
2. Add in egg and egg yolks slowly.
3. Fold in the flour.
4. Add in half of the cornflakes.
5. Remove and roll the dough into small round balls. (dump this into bowl full off cornflakes)
6. Coat the balls with remaining cornflakes. (toss and toss it)
7. Top with a small piece of cut cherry.
8. Bake for 160 degree Celsius for 25 minutes.

Pandan Layer Cake

I have been wanted to bake this Pandan Layer cake for long time ago as this is my favorite cake of all time. Sometime i will want to buy even 1 slide of it when I visit King’s confectionary cake house, but due to ‘kedekut-ness’ I will not buy it because I think I will be able to bake this myself 1 day. :p

If you ask me what cake I prefer for my birthday, I will say Pandan Layer Cake. But I will not get this cake because it looks so normal and not for special day. L so sad…. Somemore people will think I am old fashion because ask for Pandan Layer Cake. Apa ini!!! :p

I had failed in baking sponge cake tremendously and countless time. L sigh… finally I know my method was wrong as I will mix everything together can whisk it ‘kao-kao’ :p hahaha… My girl friend (gf) told me not to whisk the oil as it will put in more air and instead just fold it in with spatula. Hehe.. now I know why my batter got bubble and it is like someone is breathing under neat the batter… hahaha

Now all my batter is ready and put into oven with so much hope because the batter looks so different from my previous batter and looks promising :p

After 30mins, I remove the cake from the pan (I poke so many hole just to make sure it is cooked :p ~ I should have take a photo.. haha) Then my mom, my sister and my brother all standing beside me while I preparing my ‘knife’ ~ String tied on 2 chopsticks. When i turn the cake over and all of us shout together ‘WAH, THIS TIME IT IS COOKED’ and clap hand … walaueh :p everyone is so happy that the cake is FINALLY cooked. hahahahaha

I am so happy and quickly I ask my brother bring me to the baker supplied shop to get a UHT coconut milk (no choice as I dare not ask my dad to get a fresh one from market because I have no confident that my sponge cake can be successful or not, scare it got waste). Then I prepare my Pandan custard and at 1st I thought it will fail, but I do not want to give up as I finally got my cake ready. I stir and stir and stir the mixture and multi-task my both hand. Finally the cake is assembling. J I leave the cake overnight and slide it after I reach home from work the next day. J and I am 100% happy because the cake looks so prefect to me… wakakakakkaka

Nothing is happier when my girls ask for 2nd pieces…. I love it. :D

This is kind of long blog but I really happy that my sponge cake and my favorite Pandan Layer cake is successful. :D hahahaha

蛋糕材料:
Ingredients:
Sponge Cake
(A) 250g sponge cake mix, 250g eggs, 40g water
(B) 60g butter (melted), 1/2 tbs pandan paste

Pandan Jelly
(A) 200g coconut milk, 650g water, 180g sugar (150g only used), 1/2tbs salt, 2 tbsb jelly powder
(B) 80 green pea flour (Hoen Kwee flour - green color), 250g coconut milk, 30g water

Method:
Cake (translate later :p)
  1. 将(A)倒入搅拌器中以低速拌匀成面糊。
  2. 再以高速打至乳白状;可用面糊写“O” 字而保持10秒不下沉即可。
  3. 加入香蓝精拌匀。
  4. 再加入溶化牛油轻轻搅拌均匀。
  5. 倒入涂了油及放上烤纸的10” 烤盘中,以180度烘30分钟。
  6. 待冷,把蛋糕边修好,表皮去除,再分切成3层备用。
Pandan Jelly
  1. 将(A)混合,中火煮滚。
  2. 将(B)混合于另一小盆中,搅拌均匀。再倒入煮滚的(1)中。
  3. 以小火煮至滚。
  4. 准备好干净烤盘,把部份滚烫的咖亚到入盘底内,放上一片蛋糕。
  5. 再倒入咖亚,放上第二片蛋糕。如此重复至做完为止。
  6. 搁置一边,稍冷,放入冰箱,冷却后取出切片即可。

Pound Cake Cupcakes

I baked this for my girl 4th years old birthday after i failed 2 attempts on sponge cake. It is ok as she love this cake very much as i guest she like the strawberries and her name on it. :)

Decoration part it is up to you as some like buttercream but i really don't like it because it is too too too sweet and oily. You know la, nowadays we all very 'health conscious". hehehe... i guest this also limited to what you eat, if you like the food then health talk later. :p Children likes buttercream because whenever you making that, my princess will sit beside me and eat the buttercream while i frost the cake.
For this i just melt some semi-sweet chocolate with double boiler and deep in fresh strawberries and 'write' my girl name with some M&M alike candies. :)

Here's the recipe. You will not see any link here and please do not think i am so clever to have my own recipe :p. hahaha... I got this recipe from the 1st baking class i went ^ ^ hoho

Ingredients:
250g butter
250g fine granulated sugar (i used only 200g and it is just nice)
200g eggs (around 4 eggs)
1 tsp vanilla essence 

250g cake flour
1 1/2 tsp level baking powder

80g milk

Method:
1. Beat butter and sugar until light and fluffy
2. One at a time beat in eggs. Then beat in vanilla essense
3. Alternately add in shifted flour mixture and milk and finishing with flour mixture
4. Scoop batter into baking cup until 2/3 full
5. Bake at 180 degree for 20-25 minutes

Note:
Mix well the egg before add in another 1 (you will see that is line like spider web then you are on the right track)
Cool the cupcakes completely before frosting with your favorite recipe or decorates as you desire.

Crunchy Chocolate Chips Cookies

CNY just around the corner and this year will be the 1st year i am baking my own CNY treats :) since recently 'hot hot' about baking. :) 

I baked this Crunchy Chocolate Chips cookies as i love Famous Amos Cookies. Indeed the taste of this cookies is good and crunchy like the name of the cookies but still cannot challenge my favorite Famous Amos :( sigh... hmm... but if i put some nuts next time, the taste should be very close. Just need to bear in mind this is home bake and not commercial cookies hehehe.. excuses. :P



Recipe from Cook.Bake.Love :) else i not so clever to create my own recipe :P 
I had change some of the ingredients, so you want you may check out the original recipe ;) 

Ingredients:
(A)
140g unsalted butter (soften at room temp)
55g white sugar (reduce to 50g but still very sweet)
45g brown sugar

(B)
1 egg (room temp, lightly beaten)
1 tsp vanilla extract
 
(C)
180g superfine flour
1 tsp baking powder
Pinch of salt
(D)
120g (or more) semi-sweet chocolate chips


Method:
1) Cream (A) until the mixture turns pale and fluffy.
2) Add spoonful of (B) egg gradually, mix well after each addition.
3) Sift in (C) and beat at low speed till just incorporated (stop once see no trace of flour). Fold in (D) with a spatula.
4) Drop rounded teaspoon of the cookie dough onto lined baking tray (use 2 small spoons, one for scooping and another one for ‘pushing’ the dough onto the baking tray). Leave some space between the cookies to allow for spreading.
5) Bake in preheated oven at 180C for about 10mins or until cookies turn golden colour, upper rack. Allow cookies to rest in oven for 3 –5 mins before removing.
6) Transfer to a wire rack to cool completely and keep in airtight container.

Note:
1) Cookies may be a bit soft when they are just out from the oven, this is normal, they will harden and become crunchy after a while.
2) You may add some chopped and toasted nuts to the cookie dough if desired.
3) Yield about 90 over pieces.

I think i yield too big pieces because i only got 46 pieces :P all because of no patient. :P but it is OK since i eat myself only ma. :P hahahahaha
